Air-fried sweet potatoes, seasoned ground turkey, street-style corn, avocado and a ridiculously easy spring mix salad.
Some dinners are planned. Some dinners are measured, tested and thoughtfully assembled.
And then there are the dinners where you start just putting things in a bowl, take one bite, and realize it's worth adding to your "how to never go hungry" weekly rotation. LOL
This was the latter. 😂
I wanted something hearty without feeling ridiculously heavy, and ended up with air-fried sweet potatoes, seasoned ground turkey, a quick salad and creamy street-style corn piled into one bowl.
And BABYYYYY! Fast and simple.
The sweet potatoes are a little caramelized around the edges. The turkey gives it something savory. The salad keeps everything fresh. Then you get that creamy, salty, lightly spicy corn in the same bite?
Yeah. ON repeat!
What's in the Bowl?
Air-Fried Sweet Potatoes
You can go fancy and cut your whole sweet potatoes into chunks, drizzle them with avocado oil, add seasonings and toss everything together. In this photo, I used frozen sweet potatoes from Kroger - because mama was not in the Martha Stewart mood, kay?
Into the air fryer they went at 400°F for about 25 minutes , or until tender inside with those dark, caramelized edges I wanted.
Give them a shake/toss partway through so they cook more evenly.
Seasoned Ground Turkey
Nothing complicated here. I cooked ground turkey on the stovetop and seasoned it with all-purpose seasoning, garlic and additional seasonings to taste . Have fun with that.
This is very much a season your food like you normally season your food situation. 😂 You want the turkey well-seasoned because it's the savory base against those sweeter potatoes. If you ain't sneezin', yeen seasonin'!
The Quickest Little Salad
For the fresh side of the bowl, I tossed together:
- Organic Girl Spring mix
- Avocado
- Pico de gallo
- A small drizzle of olive oil
- Bragg Organic vinaigrette dressing
That's it. That's the blend.
I didn't want a separate elaborate salad competing with everything else happening in the bowl. This gives you something cool, crisp and acidic to break up the richer ingredients.
Creamy Street-Style Corn
This might have been the part that took the whole bowl over the top.
I pan-sautéed corn with red onion until everything had a little burnt color, then off the heat, mixed in:
- Vegan mayo (I use Follow Your Heart Vegenaise)
- Sour cream
- Parmesan cheese
- A dash of chili pepper sauce
- Tajín
Creamy. Tangy. Salty. A little spicy. Pile it right on top of your plated bowl.
Want to make the street corn fully vegan? Leave out the sour cream and Parmesan - or swap them for your favorite plant-based versions. The vegan mayo is already doing plenty of work here, so you can absolutely keep it simple.
Put It All Together
There's really no science to assembly.
Add your air-fried sweet potatoes, seasoned ground turkey and salad to a big bowl, spoon a completely unreasonable amount of street corn over everything, and call it dinner. Voila!
You could also make this your own with black beans, grilled chicken, plant-based ground “meat,” roasted chickpeas, extra vegetables, or leave the meat out completely.
Basically: use the bowl as a blueprint, not a rulebook.
And apparently, I need to start documenting more of the meals I make when I'm just throwing stuff together, because my children are greedy - and I be needing to recall my own ideas.
